Bunny Burrow Cake

This Bunny Burrow cake is too cute not to eat. Create this masterpiece for your next Easter celebration.

Equipment

  • 1 Medium mixing bowl
  • 1 8in square pan
  • 1 Piping bag and tips Wilton flower tips- #96 or #20 - Wilton leaf tips- #352 or #67
  • Bunny feet and tail candy decor
  • Electric hand mixer
  • Baking spray
  • Cooling racks
  • Small mixing bowl
  • Mini food processor  If you do not have a mini food processor, full size will still work.
  • 1 cup This cup can be any size depending on how big you want the hole for the bunny burrow
  • 1 Square cardboard cake board
  • 1 Decorating turntable

Ingredients
  

  • 1 box Carrot Cake mix can use any flavor if you desire.
  • 2-3 tubs Vanilla frosting
  • Edible easter grass or you can make edible grass with shredded coconut and green food coloring
  • 1 bar Chocolate bar crushed
  • Pink Icing color
  • Green Icing color
  • Bunny feet and tail cupcake decorations Sold as a kit on Amazon, check out the link below.

Instructions
 

  • Preheat oven to 350 °F and grease 8" cake pan with butter and flour or Baking spray with flour.
  • In a medium mixing bowl using an electric hand mixer, prepare cake batter according to directions on box.
    1 box Carrot Cake mix
  • Pour cake into greased 8" cake pan and bake 35-40mins. or until toothpick test is clean.
  • Let cake cool for 5mins in pan. Remove from pan and place on cooling rack to cool completely
  • While cake is cooling place chocolate bar in food processor or in a bag and crush by hand. You do not want a fine powder but texture that looks like dirt with lumps in it.

  • Once cake has cooled place a small dab of icing on your cake square base and place on turntable. You are ready to do a crumb coat before frosting.
  • After crumb coat is finished prepare piping bags and your tips.
    2-3 tubs Vanilla frosting

Decorating

  • In a small bowl put one scoop of vanilla frosting and add pink icing color. Stir until blended. Stir just enough to mix the color, do not over stir as the frosting will be too soft. Continue to add color until you've reached the desired pink for the flowers.

  • In a second small bowl put another scoop of vanilla frosting and add green icing color. Stir until blended. Stir just enough to mix the color, do not over stir as the frosting will be too soft. Continue to add color until you've reached the desired green like a leaf.

  • Frost the entire cake with remaining Vanilla frosting making sure to create a nice flat smooth surface.

  • In the center of the cake take a cup with a rim of the size you want to make for the bunny burrow. Sightly press down on the cake to create an indentation.
  • Take a small ice cream scoop size of frosting and place in the middle of the circle, with a spoon or frosting knife in a quick upward motion or swirling motion create fur like texture.
    2-3 tubs Vanilla frosting
  • Place the bunny tail and feet on the bunny body and put crushed chocolate around the bunny to look like dirt.

  • Now following the circle you created pipe your flowers and leaves around the bunny.
  • Continue with the flower piping and leaves around the top and bottom edge of the cake.
  • Last cut some edible grass and place in the circle with the bunny and some taller pieces in the bottom corners of the cake.
