Summer is that time of season when you are always busy doing something. Sports, BBQ’s, vacations, stay-cations, parties, and the list goes on. Don’t forget working during the week in between all the extra fun activities. But we still must eat right? UGH, who wants to cook when it’s hot outside, or after you’ve been running around? Salads are the best for a quick, light dinner, or an easy go-to as you are running out the door to your family gathering or BBQ. Here are some Summer Salads that are easy to make and great for everything, even a light dinner on its own.
Tuna Noodle Salad
It is so simple and quick to make, it is best if made the day before but can be made the same day.
Watermelon Fruit Salad Grill
When you think of summertime you think BBQ’s.
Fruit salads are great to bring to BBQ’s but what if the fruit salad was shaped like a BBQ Grill?
Yep that’s right you can turn a Watermelon into a fruit salad and make it look like a BBQ Grill.
How cute is that?
Copper Coin Salad
This salad has been in my family for generations. My Papa created this salad, and it has been a hit at every summer family gathering we had. Everyone in our family continues the tradition of the Copper Coin Salad.
Rice Vinegar Cucumber and Onion
This salad is so simple to make and refreshing you’ll want to make this all summer long. Did I forget to mention its sweetness! Rice Vinegar, Cucumber and Onion has just that sweetness to it that you can’t just have one bite.
Italian Macaroni Salad
Italian Macaroni Salad is a simple pasta salad that is best if made the day before and chilled overnight. You can make this a same day salad but best if chilled for two or more hours.
This salad is by far one of my top favorite salads, not only is it a great side salad but it can also be a light meal just by itself.

A great salad to make for brunch, family gatherings for dessert or even just a side salad.
With its Patriotic colors this salad will be a hit at 4th of July.
