We all have our favorite cookie recipes, and sometimes we just don’t have time to make those recipes, so we fall back on the pre-made cookie dough from the grocery store. Sure, those are great for a quick cookie fix don’t get me wrong. But when it comes to the holidays or certain recipes you just have to make them from scratch. Soft Sugar Cookies from Scratch.

The key to a soft cookie is to not over mix the dough. In this recipe you do not mix the dry ingredients together, the eggs and butter are at room temperature, and you mix in between adding ingredients instead of continuously mixing.

Soft Sugar Cookies From Scratch.

Equipment

  • 1 Stand-up mixer You can use a electric hand mixer
  • 1 Large mixing bowl
  • 1-2 Cookie sheets
  • Parchment paper You can also use silicone baking mat
  • Cooling racks

Ingredients
  

  • 1 cup butter softened at room temperature
  • 1⅓ cup granulated sugar
  • 1 large egg room temperature
  • tsp vanilla
  • cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder

Instructions
 

  • Preheat oven to 350 °F
  • In a large mixing bowl using a hand mixer, or a stand-up mixer. Cream together butter and sugar until light and fluffy. Do not over mix.
    1 cup butter, 1⅓ cup granulated sugar
  • Add vanilla and egg, mix until combined.
    1 large egg, 2½ tsp vanilla
  • Next, add baking soda and baking powder mix until combined.
    ½ tsp baking soda, ½ tsp baking powder
  • Gradually add flour, making sure to mix completely before adding more flour.
    2½ cups all-purpose flour
  • Make sure to scrape the side of the bowl often.
  • Roll dough into 1" balls, or roll out to ⅜" thickness and use cookie cutters.
  • Place on prepared cookie sheets and bake for 10-11mins, or until slightly golden brown around the edges.
  • Do not over bake them or they will not be soft.
  • Remove from oven and allow to cool before moving to cooling racks.
