Rice Vinegar Cucumber and Onion
Summertime is here and the days are getting longer. Enjoy an easy side dish with your summer meal on the back patio or even for a single serving to have for your lunch. This salad is so simple to make and refreshing you’ll want to make this all summer long. Did I forget to mention its sweetness! Rice Vinegar, Cucumber and Onion has just that sweetness to it that you can’t just have one bite.
Rice Vinegar Cucumber and Onion Salad
Equipment
- 1 Medium mixing bowl
- 1 Small cutting board
Ingredients
- 2 whole Cucumbers Peeled, sliced and milked
- 1 small/medium Yellow Onion Cut into rings
- ¼ cup Rice Vinegar
- ¼-⅓ cup water Depends on how strong you like your vinegar.
- dash salt
- dash ground black pepper
Instructions
- Wash and peel your cucumber if you wish to not have skin. (I usually do the "every other" peel version, but you can peel your cucumber completely if you wish)2 whole Cucumbers
Milking The Cucumbers
- Next "milk" your cucumber. You will want to cut just the tip off the cucumber, and hold it to the exposed end, using a circular motion, start rubbing the two pieces together. Do this until you start to see a milky substance form around the edges. **This is called "milking" as you can see while you are doing this it starts to create a milky substance around the edges. What this process does is remove all the bitterness from the cucumber, leaving the sweetness.**2 whole Cucumbers

- Now cut your cucumbers into thin slices. Not paper thing but not too thick.2 whole Cucumbers
- At this point you can decide to leave them whole or cut them in half again.**I sometimes like to cut them in half again because I usually end up doing that when I'm eating the salad anyway. But you do not have to.**2 whole Cucumbers
- Peel and cut your yellow onion into thin circles and then cut in half again. **You can also chop them if desired.**1 small/medium Yellow Onion
- Place your cucumbers and onion in a small/medium mixing bowl.
- Add the remaining ingredients, rice vinegar, water, salt and pepper to taste.¼ cup Rice Vinegar, ¼-⅓ cup water, dash salt, dash ground black pepper
- Cover and put in refrigerator, allow to soak 1-2 hours or overnight
- Before serving give one good stir and add more salt and pepper if desired.
