Mint Chocolate Chip Sugar Cookies

These mint-colored sugar cookies will be a great treat for any party or perfect for St. Patrick’s Day.
Mint Chocolate Chip Sugar Cookies
Equipment
- 1 Stand-up mixer You can use a electric hand mixer
- 1 Large mixing bowl
- 1-2 Cookie sheets
- Parchment paper You can also use silicone baking mat
- Cooling racks
Ingredients
- 1 cup butter softened at room temperature
- 1⅓ cup granulated sugar
- 1 large egg room temperature
- 2½ tsp vanilla
- 2½ cups all-purpose flour
- ½ tsp baking soda
- ½ tsp baking powder
- 12 oz bag mini semisweet chocolate chips
- 1 ½ tsp Mint extract
- Green food coloring
Instructions
- Preheat oven to 350 °F
- Line baking sheets with parchment paper or silicone baking mat
- In a large mixing bowl using a hand mixer, or a stand-up mixer. Cream together butter and sugar until light and fluffy. Do not over mix.1 cup butter, 1⅓ cup granulated sugar
- Add vanilla and egg, mix until combined.1 large egg, 2½ tsp vanilla
- Next, add baking soda and baking powder mix until combined.½ tsp baking soda, ½ tsp baking powder
- Gradually add flour, making sure to mix completely before adding more flour.2½ cups all-purpose flour
- Make sure to scrape the side of the bowl often.
- Add Mint extract starting with 1 ½tsp, give a good mix, and gradually add more extract depending on how minty you want your cookies1 ½ tsp Mint extract
- Starting with 3-4 drops of green food coloring, mix until combined. Continue to add until desired "mint" color is achievedGreen food coloring
- Fold in ½ bag of min chocolate chips then add remaining bag and fold until well combined.12 oz bag mini semisweet chocolate chips
- Roll dough into 1" balls or use cookie scoop of your choice.
- Place on prepared cookie sheets and bake for 10-11mins, or until slightly golden brown around the edges.
- Do not over bake them or they will not be soft.
- Remove from oven and allow to cool before moving to cooling racks.
