These lucky cookies as simple and easy to make. Fun for kids and adults, Lucky Charms Marshmallow Cookies will bring out the Irish spirit in everyone!

We used our all-time favorite soft sugar cookie recipe and added a little Irish luck to them.

Back in the day you used to be able to find cereals that were just the marshmallows from your childhood, but we had no such luck with finding them when we came up with this cookie idea.

As luck would have it we had another recipe idea that would use Lucky Charms cereal for, so it was a win-win.

Lucky Charms Marshmallow Cookies

The Luck of the Irish is on your side with these delicious sugar cookie treats.

Ingredients
  

  • 1 cup butter softened at room temperature
  • 1⅓ cup granulated sugar
  • 1 large egg room temperature
  • tsp vanilla
  • cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 cup Lucky Charms marshmallows You used to be able to find just the marshmallows as a cereal in the stores but if you are unable too you can purchase just the marshmallows on Amazon or you can buy the cereal and pick out the marshmallows
  • Rainbow Sprinkles/Confetti

Instructions
 

  • Preheat oven to 350 °F
  • In a large mixing bowl using a hand mixer, or a stand-up mixer. Cream together butter and sugar until light and fluffy. Do not over mix.
    1 cup butter, 1⅓ cup granulated sugar
  • Add vanilla and egg, mix until combined.
    1 large egg, 2½ tsp vanilla
  • Next, add baking soda and baking powder mix until combined.
    ½ tsp baking soda, ½ tsp baking powder
  • Gradually add flour, making sure to mix completely before adding more flour.
    2½ cups all-purpose flour
  • Make sure to scrape the side of the bowl often.
  • Roll dough into 1" balls, and place on prepared cookie sheets. With the palm of your hand flatten down slightly. Add Lucky Charms marshmallows and Rainbow sprinkles/confetti

  • Bake for 10-11mins, or until slightly golden brown around the edges.
  • Do not over bake them or they will not be soft.
  • Remove from oven and allow to cool before moving to cooling racks.

Notes

I tried two different ways when adding the Lucky Charms marshmallows. I first tried baking them and then I also tried adding them right after baking them when they were still soft and just before they were cooled down. 
Either way works, just know that both ways also have some flaws. 
If you add the Lucky Charms marshmallows before baking there is a chance that they will melt a little.
If you add the Lucky Charms marshmallows after baking, you have to make sure to add them right after you pull them out of the oven so the cookie is still soft enough to be able to push the marshmallows into the dough so they can set as they cool.
