Winter is the best time of year for hot cocoa, and these Hot Cocoa Cookies are just as good as a warm cup of hot cocoa.

Hot Cocoa Cookies are great to have around the holidays topped with crushed candy canes, they taste just like a peppermint mocha.

As a matter of fact, we make them every holiday season as they are one of Jordyn’s favorites, along with making G-Ma’s fudge.

Hot Cocoa Cookies

Winter is the best time of year for hot cocoa, and these Hot Cocoa Cookies are just as good as a warm cup of hot cocoa.

Equipment

  • 1 Stand-up mixer
  • Cooling racks
  • 1 1-2qt saucepan
  • Cookie sheets
  • 1 Small Cookie scoop optional
  • 1 Medium mixing bowl

Ingredients
  

  • ½ cup Unsalted Butter 1 stick
  • 12 oz Bag Semisweet Chocolate chips
  • cups Flour
  • ¼ cup Cocoa Powder
  • tsp baking powder
  • ¼ tsp salt
  • 3 eggs room temperature
  • tsp Vanilla extract
  • cup light brown sugar packed
  • 12 Regular size marshmallows
  • 2 bars Hershey Chocolate

Instructions
 

  • In a saucepan melt unsalted butter and semisweet chocolate chips, once melted let cool for 15mins
    ½ cup Unsalted Butter, 12 oz Bag Semisweet Chocolate chips
  • In a medium mixing bowl combine flour, cocoa powder, baking powder and salt. Set aside
    1½ cups Flour, ¼ cup Cocoa Powder, 1½ tsp baking powder, ¼ tsp salt
  • Mix eggs, vanilla, and light brown sugar in standup mixer, add melted chocolate.
    3 eggs, 1½ tsp Vanilla extract, 1¼ cup light brown sugar
  • Remove mixing bowl from standup mixer and fold in flour mixture, to avoid creating a cloud poof.
  • Chill for 1hr.
  • Preheat oven to 325 °F
  • Remove cookie dough from refrigerator and using a small cookie scoop or spoon, place cookie dough on prepared cookie sheet.
  • Bake for 12mins.
  • While cookies are baking cut each marshmallow in half and break apart Hershey chocolate bar so there is a brick of chocolate for each marshmallow.
    12 Regular size marshmallows, 2 bars Hershey Chocolate
  • Take out cookies and place a chocolate brick on each cookie followed by a marshmallow.
  • Place back in the oven and bake for an additional 4mins.
  • Take out of oven and let cool for 5mins. Place on cooling rack
  • Don't forget to add these to the plate of cookies for Santa!

Notes

Top with crushed candy canes for a Peppermint Mocha Cookie.
