Gluten Free Baked Blueberry Donuts

GF baked blueberry donuts are a quick and easy healthy breakfast.

Equipment

  • 1 Donut Pan
  • 1 Medium mixing bowl
  • 1 Small mixing bowl
  • 1 Cooling racks

Ingredients
  

  • ¼ cup Whole milk
  • 1 tsp ACV
  • ¼ tsp Vanilla extract
  • cup Pure maple syrup you can substitute with Agave or Honey
  • tbsp oil you can substitute with Applesauce
  • 1 cup GF all in one flour
  • ¼ tsp salt
  • 1 tsp baking powder
  • pinch Cinnamon
  • ½ cup Blueberries fresh or frozen

Glaze

  • 2 tbsp Whole milk
  • ½ tsp Vanilla extract
  • 1 cup Swerve Confectioner's Sugar

Instructions
 

  • Set oven to 350 °F and grease a donut pan or a mini muffin pan. You can also use the muffin top pan as well.
  • In a small mixing bowl combine the first 5 ingredients and set aside.
    ¼ cup Whole milk, 1 tsp ACV, ¼ tsp Vanilla extract, ⅓ cup Pure maple syrup, 3½ tbsp oil
  • In a medium size bowl stir together all remaining ingredients except the blueberries, pour the wet ingredients into the dry and stir until just evenly mixed. Don't overmix as you still need to stir in the blueberries.
    1 cup GF all in one flour, ¼ tsp salt, 1 tsp baking powder, pinch Cinnamon
  • Add the blueberries and gently fold them into the batter, making sure to not smash/break open the blueberries as they will turn the batter purple. You can also choose to wait and once the batter is poured into the pan you can then add the blueberries and carefully press them in.
    ½ cup Blueberries
  • Pour batter into greased pan and bake 10-12 minutes or until donuts have risen and batter is no longer wet when poked with a toothpick.
  • Let sit for 5 minutes before removing from pan and putting on cooling rack.
  • While donuts are cooling make glaze

Glaze

  • Mix all ingredients together until smooth. If too thin add more confectioner's sugar.
    2 tbsp Whole milk, ½ tsp Vanilla extract, 1 cup Swerve Confectioner's Sugar
  • Pour over cooled donuts
