Copper Coin Salad
This salad has been in my family for generations. My Papa created this salad, and it has been a hit at every summer family gathering we had. Everyone in our family continues the tradition of the Copper Coin Salad.
Copper Coin Salad

*This dish must sit overnight in the refrigerator*
Copper Coin Salad
Equipment
- 1 1-2qt saucepan
- 1 Medium mixing bowl
- 1 Large mixing bowl with lid or cover with plastic wrap/foil
Ingredients
- 2 lbs fresh carrots
- 10¾ oz can tomato soup
- 1 cup granulated sugar
- ½ cup salad oil
- ¼ cup wine vinegar
- 1 tbsp Worcestershire sauce
- 1 tbsp prepared mustard
- 2 drops Tabasco sauce
- 1 medium/large Green Bell Pepper
- 1 medium Onion
- 3 stalks Celery
Instructions
- Wash, pare and slice carrots2 lbs fresh carrots
- Cook carrots in salted water for about 10mins or until tender.2 lbs fresh carrots
Meanwhile prepare the following in a mixing bowl,
- tomato soup, sugar, oil, vinegar, Worcestershire sauce, mustard and tabasco sauce. Mix well and set aside.10¾ oz can tomato soup, 1 cup granulated sugar, ½ cup salad oil, ¼ cup wine vinegar, 1 tbsp Worcestershire sauce, 1 tbsp prepared mustard, 2 drops Tabasco sauce
Next prepare the following,
- 1 medium/large green bell pepper: washed, remove veins and seeds and finely chopped. 1 medium onion, finely chopped, 3 celery stalks, washed and finely chopped1 medium/large Green Bell Pepper, 1 medium Onion, 3 stalks Celery
Continue to next steps…
- When carrots are cooled, combine all vegetables in a large mixing bowl.
- Cover with the sauce and mix well.
- Cover and refrigerate overnight.
Notes
Time to eat
- When ready to serve pour off excess sauce and serve on a lettuce leaf.
- This can also be eaten alone just as is.
Storing
This is a large recipe and can be divided. I really enjoyed writing this article, as this salad just appeared at our family gathering we had. The best part is I copied this from one of his original printed recipe cards. Brings back memories of when he would sit at his computer (before that they were all handwritten) and he would type them out, save them on one of his many floppy disks, and then print them out and put them in binders. Oh the binders he had on the shelves in the kitchen full of recipes.
