Chicken and Dumplings
This quick and easy Chicken and Dumplings dinner is a recipe you can throw in the crockpot on those cold winter days and let the aroma fill the house.
Most of the ingredients you might already have on hand, and if you aren’t going to the grocery store anytime soon to buy a rotisserie chicken but happen to have frozen chicken on hand that works too.
There are so many ways to make this meal you can’t go wrong. Oh, and don’t forget the croissants to go on the side like I did HA!
Crockpot Chicken and Dumplings
Equipment
- 1 Crockpot
- 1 Medium mixing bowl
Ingredients
Soup
- 1 ½ cartons Broth Chicken or Vegetable
- 2 cups water
- 1 can Cream of Chicken soup or Cream of Mushroom soup
- 3 cups Rotisserie Chicken pulled apart, chunked, or shredded
- ½ bag Shredded Carrots
- ½ White Onion chopped
- 3-4 sticks Celery chopped
- 1 tsp ground black pepper season to taste
- 1 tsp garlic powder season to taste
- ½ tsp onion powder
- pinch salt season to taste
- 1 tsp Parsley season to taste
Dumplings
- 1 cup all-purpose flour
- 2 tsp baking powder
- 2 tbsp butter melted
- ⅓ cup milk plus 1 tbsp
- 2 tbsp granulated sugar
Instructions
- Pour Broth, water, and carrots into crockpot turn setting to Auto or medium heat.1 ½ cartons Broth, 2 cups water, ½ bag Shredded Carrots
- Chop onion and celery, add to crockpot½ White Onion, 3-4 sticks Celery
- At this point you can chop, pull apart or shred the rotisserie chicken and add it to the crockpot3 cups Rotisserie Chicken
- Add the remaining ingredients for the soup to the crockpot1 can Cream of Chicken soup, 1 tsp ground black pepper, 1 tsp garlic powder, ½ tsp onion powder, pinch salt, 1 tsp Parsley
- Let the soup cook for roughly 1-2 hours. At 2 hours you will want to prepare you dumpling batter.
Dumplings
- In a medium size mixing bowl you will want to combine flour, sugar and baking powder, mix until combined.1 cup all-purpose flour, 2 tsp baking powder, 2 tbsp granulated sugar
- Add melted butter and ½ of the milk, stir. Add remaining milk and stir until it forms a dough. If dough is still dry and clumpy add 1 tbsp of milk.2 tbsp butter, ⅓ cup milk
- Pinch off dough and start dumping it into the soup. The size of the pinch doesn't matter as they tend to expand when cooking.
- Put the lid back on and turn the heat to high for 30-45mins.
- After 30-45mins turn the dumplings over and place a piece of foil on top of the dumplings, you do not have to push the foil into the soup just place over the top and put the lid back on for the remainder 15-30mins.
- Serve and Enjoy!
