A Berry Cheesecake Salad Keto Version is so simple and easy to make, you can even have it for breakfast.

This Keto friendly fruit salad is great to make when you get that sweet tooth and craving something so good but don’t want to grab the first piece of candy or left-over cake.

A great salad to make for brunch, family gatherings or even as a single serving for breakfast.

This Keto version berry cheesecake salad is a great summer salad, breakfast meal or even a quick healthy snack.

Equipment

  • 1 Serving bowls Single serve, Family style, Large gathering style
  • 1 Electric hand mixer Or stand-up mixer
  • 1 Large mixing bowl

Ingredients
  

  • 16 oz Cream Cheese softened
  • 1 tsp Stevia Granular Sugar
  • 1 cup Heavy Whipping Cream
  • 1 cup Strawberries Fresh
  • 1 cup Blueberries Fresh
  • 1 cup Blackberries Fresh
  • 1 cup Raspberries Fresh
  • 2 tsp Vanilla extract

Instructions
 

  • In a large mixing bowl add softened cream cheese and mix until smooth
    16 oz Cream Cheese
  • Next add Stevia, heavy whipping cream and vanilla extract. Mix until combined
    1 tsp Stevia Granular Sugar, 1 cup Heavy Whipping Cream, 2 tsp Vanilla extract
  • Continue mixing until thick, if too thick add a tsp of whipping cream until desired thickness is achieved.
  • Fold in the berries. Cover until ready to serve.
    1 cup Strawberries, 1 cup Blueberries, 1 cup Blackberries, 1 cup Raspberries
